For this week’s in-house cafe, Goldie’s Gourmet Goodies offered staff and friends a menu with a Summer grilling theme. Staff, adults from our employment training and services program, and Kid Corps volunteers worked together on this delicious lunch:

1/4 lb. Burgers – Mushroom Swiss (portabello mushrooms and baby Swiss), Jalapeno Cheddar (Raw jalapeños with a sharp cheddar), or Bacon Mozzarella (crumbled bacon and stringing mozzarella)

Goldie’s baked Chips, regular or malt fry seasoning

Crunchy Salad – Fresh cabbage slaw salad with sunflower seeds, almonds, scallions, and ramen noodles and Asian vinaigrette

And of course, the dessert…

Southern Apple Dumplings (served with a scoop of fresh vanilla bean ice cream made with the Cafe/ GGG new ice cream maker!)

(Serves 8)

1 tart apple (such as Granny Smith), cored, peeled, and sliced into 8 wedges

1 10-ounce can refrigerator crescent roll dough

1 stick butter, cubed

3/4-cup sugar

1/2 tsp. cinnamon

1-1/2 tbl. flour

6 ounces Sprite

Directions

Preheat oven to 350 degrees F.

Separate the dough into triangles. Place one apple wedge one dough strip and roll, starting at widest end. Pinch ends tight. Place in greased 9 x 13″ pan and repeat.

In small bowl, mix butter, sugar, cinnamon, and flour until just combined. Spoon over dumplings (in pan). Pour Sprite into empty spaces between dumplings (not on top of crescent roll dough).

Bake 35-50 minutes until golden brown. Serve with a scoop of vanilla ice cream.
